Oooohh...summer is slipping on by and I need to get back onto menu planning again.  We have been kinda flying by the seat of our pants here!

Menu for Week of June 18-June 24

Monday- Chicken Salad Sandwiches, Bacon Dressing Salad, cut fruit
               Chicken Salad Sandwiches (kinda of did my own thing, just add what sounds good and what's on hand):
- 2 c. chopped cooked chicken (I used what we had left from our Father's Day cookout)
- 1/4 c. golden raisins
- 1/4 c. craisins
- 1/4 c. diced celery
- 1/4 c. slivered almonds
- 3/4 c. mayo
- 2-3 Tbsp. honey
- dash of salt and pepper
Mix may, honey and salt and pepper together.  In another bowl, mix all the other ingredients.  Combine mayo mixture with chicken mixture.  Serve on croissants or sandwich thins.  Perfect with a slice of swiss or provolone cheese and fresh lettuce and tomato from the garden!

Bacon Dressing Salad:
An absolute summer staple in our house growing up!  I looked forward to summer so much, just to eat this salad! 
- Fresh, washed and dried lettuce from the garden (A LOT! it will really shrink up with the dressing)
- If you have fresh spinach, it is wonderful to mix in as well~
- In a small frying pan, fry up some bacon (I would say about 4-5 slices)
- I add some diced onions to the pan as well
- Leave the grease dripping, but remove bacon
- Cut bacon into small pieces
- Add 2 Tbsp. flour to the grease in the pan, as well as 6 Tbsp. sugar (yeah, really not healthy, but oh so yummy :)
- Mix together well, then slowly pour in 4 Tbsp. apple cider vinegar and stir until thickened
- Add in the bacon pieces
- Pour the bacon dressing over the spinach/lettuce right before serving
- Eat immediately (will not keep, so make what you will eat....for 2 of us, I halve the recipe)

Tuesday- Stuffed Green Peppers, corn, applesauce
Wednesday- Smoked sausage, peppers/onions, green beans, fried potatoes
Thursday- Barbecue Meatloaf, mashed potatoes, tossed salad
Friday- Leftovers
Saturday- Grilled Pizza

Monday- Asparagus chicken stir fry, egg rolls, bread and butter
Tuesday- Grilled pizzas (tomato/provol./basil, pepperoni/cheese), sweet potato chips, cucumbers
Wednesday- Birthday dinner out!
Thursday- Raspberry Pancakes, blueberry muffins, fried eggs
Friday-
Saturday- yard work day:  pb&j, pasta salad, cheese sticks
               - Birthday Pool Party at Memaw and Papaw's:  grilled steak, tossed salad, bread
Sunday- Homemade Mac'n cheese, peas, hot dogs
            - Father's Day cookout at our house:  Spicy Honey Chicken, Barbecue Ribs

Friday- Leftovers
Saturday- Chipotle :)
Sunday- Philly cheese steaks, french fries

Friday- Auntie Anne's Cinnamon/Sugar Pretzels, mozzarella sticks
Saturday- Grilled Pizza

Thursday- Brats with green peppers and onions, Best Broccoli, applesauce
Friday- Grilled Chicken Kabobs, corn on the cob
Saturday- Fried Coconut Shrimp, tossed salad, baked sweet potatoes

Banana smoothies---a hit with the kids!
